paleo-breakfast-ideasAvocado-Bacon Omelets (Serves 2)
INGREDIENTS:
1 avocado
4 bacon slices
2 tbsp minced red onion
1 tbsp minced fresh cilantro
4 eggs
INSTRUCTIONS:
1. Cook bacon until crisp.
2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash, but not overly fine.
3. Add onion and cilantro.
4. When the bacon is done, drain it and crumble it in. Stir together.
5. Make the 2 omelets.
wafflesCrispy Vanilla Waffles (Serves 3-4)
INGREDIENTS:
4 eggs, whisked
æ cup applesauce
1 teaspoon vanilla extract
2 tablespoons coconut oil, melted
1 cup tapioca flour
1 cup vanilla protein powder
1 teaspoon baking soda
º teaspoon cinnamon
pinch of salt
maple syrup
INSTRUCTIONS:
1. Whisk together applesauce, eggs, vanilla extract, and coconut oil.
2. Add flour and whisk until combined. Add protein powder and whisk again to combine. Then add baking soda, cinnamon and a pinch of salt. Mix well.
3. Pour batter into the waffle iron (greased, if necessary) and cook until crispy. (3-5 minutes). Repeat with the remainder of the batter.
4. Garnish with maple syrup
